Ingredients:

1 kilo whole chicken (it can be Pinoy chicken or any available chicken), cut into pieces.
1 small young papaya or sayote, cut into small pieces.
2 tablespoons ginger, crushed and sliced into strips
1/2 cup leaves of chili (chili leaves)
1 liter of water
 5 garlic cloves, minced
 5 pieces of tomatoes, sliced
1 red onion, diced
4 tablespoons oil
 2 tablespoons patis (fish sauce)
Cooking Procedure:
You can use stock pot. Then you must heat oil and sauté garlic. Wait a few minutes until brown next put onion, tomatoes, chicken and ginger. As soon as the tomatoes are already cooked, add 1 liter water. Let it simmer or bring into boil for 20 minutes otherwise the chicken is almost done. Next, you can season it with patis or fish sauce or you can use salt. After adding seasoning, you must add the papaya or melon tree and let it prolong to boil for additional 5 minutes otherwise just wait until papaya or melon tree softens but be sure not too overcooked to have the perfect taste. Lastly, you must add the chili leaves then switching off the heat. It’s best to serve tinolang manok while it is steaming hot with plain rice.
