Ingredients:

2-3 tbsp. oil
3 potatoes, peeled, quartered and fried
1 lb. chicken, cut into serving pieces
3 cloves garlic, minced
1 large onion, quartered
1 tbsp. patis (fish sauce)
3 tbsp. curry powder
Salt and pepper
1 cup water
1 red bell pepper, cut into big squares
1 green bell pepper, cut into big squares
3 celery stalks, cut into 1-1/2” long
1 cup coconut milk or evaporated milk

Procedure of Cooking:

In a sauce pan, you will fry potatoes. Then you set aside. The next procedure is in the same pan; fry up chicken pieces until it will turn to brown a little. Consequently, add garlic and onion. You need to sauté for a few minutes awaiting soft. The next step is pour in patis or fish sauce as well as seasons it with curry powder, salt and pepper. You need to stir for 2 minutes. Then add water. After adding water, you can cover it and bring to a simmer. You need to lower the heat; next, add celery, bell peppers as well as fried potatoes. Boil for 3 minutes otherwise until half done. After that, add milk and stir rarely or occasionally. Lastly, you must cook for an additional 7 minutes or lesser after with evaporated milk because the liquids will become curled. Now, you can remove from heat. Serve hot with extra rice.
